For starters, GRUB is a boot manager, not a login manager. Which desktop environment did you choose, if any? Graphical login is handled by a display manager which depends on the DE, GDM is default for GNOME, SDDM for KDE, lightdm for Xfce etc. And generally you can't log in as root to a graphical DM.
Are you seeing a graphical DM? Is your username displayed? Or do you see only a console screen?
