I'm glad that it wasnt just me getting completely confused by the various versions and documentation.
Main Topic is solved, although I still need to sort out how to get pipewire and wireplumber to continue to run while the user account is not logged in via SSH. Seems to stop updating the connections and broadcasting the avahi/bonjour session otherwise. I suspect it's just a matter of setting the service to run on boot, but it is a user process. A problem for another day.
